The rest of OLMA was filled with lots of cheese tasting, asking locals who didn't speak English if I could mail cheese and meat to the US (I still don't really know), and checking out the local livestock.

You can make cheese to the US - I do not know whether your supposed to do it but you can.
I got french cheese by mail (brie and camenbert, the good stuff, from raw milk). The first time it was really good. The second packet took a bit too long - Man that was stinky. Just on cheese was still eatable, but that one was delicious! (I had to keep in in the backyard .. )
Actually, you are not allowed to bring products from raw meet, or raw milk soft cheese into the US. Rule of thumb: if it is tasty, it is probably not legal.
All the "bet" for the losing pig....lost?
